鹹酥雞的製作方式並不複雜,首先準備一般使用雞腿或雞翅,切成適當大小的塊狀。調味料有大蒜、生薑、醬油、五香粉、胡椒粉等。麵粉淋汁由鹽、胡椒粉、太白粉、麵粉混合而成。
先將雞肉放入容器中,加入蒜蓉、生薑蓉、醬油、五香粉、胡椒粉等調味料,拌勻後醃製約30分鐘,使雞肉入味。將醃製好的雞肉均勻裹上麵粉淋汁,確保每塊雞肉都均勻沾滿調味料。
預熱炸鍋,加入適量的食用油。將裹好麵粉的雞肉放入熱油中,炸至外皮金黃酥脆。將炸好的鹹酥雞取出,放在廚房紙巾上瀝油,去除多餘的油分。這時候可以將九層塔放入油中炸香,再將雞肉回鍋再炸一次,只需要30秒的時間,當看到出現酥脆的顏色就可以撈起。
鹹酥雞可以單獨食用,也可以搭配辣椒醬、醋或特製的鹹酥雞醬,然後撒上大量的胡椒粉來增添風味。

The preparation of Salt and Pepper Chicken is not complicated. Begin by cutting chicken thighs or wings into appropriately sized pieces. The seasoning includes garlic, ginger, soy sauce, five-spice powder, and pepper. The flour mixture is made from salt, pepper, cornstarch, and flour.
Start by placing the chicken in a container and adding minced garlic, ginger, soy sauce, five-spice powder, and pepper. Marinate for approximately 30 minutes to allow the chicken to absorb the flavors. Coat the marinated chicken evenly with the flour mixture, ensuring each piece is well-covered.
Preheat a deep fryer or pan with an adequate amount of cooking oil. Fry the flour-coated chicken pieces until the exterior turns golden brown and crispy. Remove the fried Salt and Pepper Chicken and place it on kitchen paper towels to absorb excess oil. At this point, you can also fry basil leaves in the oil until fragrant, then return the chicken to the pan for an additional 30 seconds until it achieves a crispy texture.
